The mercenary option is usually only available in the beginning of the game to help you join a faction without having much renown, or when a faction is at war with 2 or 3 others. If you ask a Crimean noble where the Khan is, and they respond "I don't know," it means that the Khan was defeated in battle and will re-spawn in probably two weeks

You can join as a vassal. You cannot join as a mercenary. Two different options to join a kingdom. The mercenary route can mean more money. The vassal route can mean the ability to get more fiefs. So wait for war and then ask. I usually help fight battles with other lords, for the faction I want to become a mercenary for. Then eventually, when I gain a positive reputation with the faction, I talk to a lord from the faction and there is usually an option to become a mercenary. You need at least 30 renown IIRC.
